“ The Pisne at this restaurant came highly recommended from a local “foodie” friend. Look up pisne dough if you aren’t familiar with it. It’s made with a variety of flours and slow fermented. I am sensitive to gluten in the USA and did well with it. The depth of flavor in the dough was incredible. My wife and I each ordered (and finished!) our own—and surprisingly didn’t have that heavy bloated feeling afterwards. Staff was prompt, kind, and English friendly. Would highly recommend trying Pisne here while in Rome! ”
